Pico de Gallo Chicken Tacos
These shredded chicken tacos are full of flavors and spices and it’s so easy to make your own pico de gallo to top them off with; and that’s all you need! Yes these tacos are just tortillas, chicken, and your homemade pico. The nutritional information on the bottom is pretty pleasing as well. 🙂
1. Season chicken with cumin, chili powder and Cajun seasoning. Bake on a cookie sheet with foil at 450 degrees Fahrenheit for 20 minutes.
2. While the chicken is cooking, cut up all veggies and use half the lime and toss together well.
3. Heat up your tortillas on the stove in a pan on low heat, about a minute on each side or until they feel soft. When the chicken is done, let it cool for just a few minutes and then shred with two forks.
Each taco should first about a 1/4 cup full of the chicken, then just top with pico and EAT!
