Homemade Basil Pesto with Pine Nut
I love basil pesto and normally when I make something with it, I take the easy route and buy the little jar of premade pesto. The problem for me is that it is full of oil making a 1/4 cup 240 calories! I wanted to try and make a homemade basil pesto that was a little lighter. I lightened up the oil and added some pine nuts into this one because I wanted a subtle, sweet flavor and crunch to my basil pesto. Plus, a 1/4 cup of this has 142 calories.
- 2 cups chopped basil
- 1 tbsp olive oil
- 1 tbsp water
- 1/4 cup shredded parmesan cheese
- 1/4 cup pine nuts
- 1 tbsp minced garlic
- Salt & Pepper to taste
Throw all your ingredients into a food processor and blend it up for a few minutes until smooth. Doesn’t get much easier than that for homemade basil pesto, now does it?
